Biscuit Recipes - using XL Muffin Mix


Our Favourite biscuit recipe: Peanut Brownies

Ingredients:

Group 1

XL Muffin Mix              2.000kg

Butter                          0.600kg

Flour                            0.400kg

Egg                              0.350kg

Chocolate paste             0.125kg

Group 2

Roasted peanuts             0.200kg

TOTAL                         3.675kg     Yield @ 0.040kg for 91 units.


Method:


1. Place group 1 in a bowl fitted with a beater
2. Mix on speed 1 for 2 minutes. Scrape down.
3. Add group 2 and blend in.
4. Remove from the mixing bowl.
5. Weigh off each biscuit at 0.040kg
6. Mould round and place on tray
7. Flatten slightly and bake in oven at 180˚C for approx. 16minutes.
8. Once cooled, finish as desired.
