Chocolate Sponge Round filled with mock creme :
Ingredients:
Eggs 1.200kg
Water 1.050kg
XL Chocolate Sponge Mix 3.000kg.
Mock Creme 0.120kg
Method:
1. Place all ingredients into mixing bowl in above order, except for creme.
2. Mix on speed 1 for 1 minute. Scrape down.
3. Whisk on top speed for 10 minutes, followed by 2 minutes on second speed. .
4. Deposit batter into round sponge tins greased with SP10 spray.
5. Bake in oven at 190˚C for approx. 16 minutes.
6. When cool fill with mock creme and dust with dusting sugar .
